Komatsuna, Japanese Spinach

Komatsuna, Brassica rapa var. perviridis

A green leafy vegetable originating in Sakura, Japan.  It is also known as Japanese Spinach and Japanese Mustard Spinach, tender green or mizuna. Additionally it is also called Horenso in Japanese. It got its name from Japan’s Komatsugawa district.  Komatsuna is a staple in Japan.

It is a leafy form of wild turnip and is evolved from Pak choi or Chinese cabbage. It is related to Bok choy and Rapini.

Kale, Cauliflower, Brussel sprouts and Broccoli. 

It can be grown year ‘round, its peak season being fall through spring. It does not thrive in extreme heat or cold.

The young plants have dark green leaves that are somewhat round. The mature plants have dark green leaves with slender light stalks that grow to about 12” tall and 7“wide.

The leaves are highly edible at any phase of the growth of the plant. Young leaves are nice raw in salad and blended with other greens. The mature leaves are a tasty addition to soups, stews, stir fries and vegetable sautees, especially when seasoned with ginger, garlic and scallions. It is a great accompaniment to fish. It is also good pickled.
